Elizabeth Lee, MS, RD stumbled into the field of dietetics in her first college course. Though she had set out to pursue pediatrics, she quickly fell in love with the idea of using food to prevent and heal illnesses.
As she progressed through school and became a dietitian, she realized many dietary guidelines and food policies are not set with illness prevention and public health improvement in mind. Instead they are heavily influenced by the interests of transnational food companies and lobby groups. More troubling is that she felt her own professional organization is acting in similar ways with passive endorsements of its sponsors’ nutrient-poor foods.
Elizabeth is hopeful that her professional organization will re-evaluate its relationships with sponsors and distance itself from companies that have perpetuated the nation’s health decline.
